Luwak Coffee or Civet Coffee is a rare naturally fermented coffee in the world that has an uniquely heavy bodied, smooth, mild with sweet aroma and caramelly hint. The limited production volume, rarity, longer process and higher production cost involved aside of it’s very unique taste like no other coffee makes this coffee extremely expensive.

Luwak Coffee or Civets Coffee is a coffee made from coffee berries which have been eaten by and passed through the digestive tract of an animal called Luwak or Civet. Luwak or Asian Palm Civet (Paradoxurus Hermaphroditus) is a type of mongoose. Some species of mongoose found in Southeast Asia, but which produces the best flavored coffee is the Indonesian Civet. This species live in Sumatra and Java.

They choose only fruit that has an optimum level of maturity based on taste and smell, and eat it by peeling the outer skin with mouth, then swallowing the mucus and the beans. Coffee beans that are still wrapped in the hard cuticle (horn skin/parchment) are not destroyed in the digestive system, due to their simple digestive system when luwak release them out with the feces, the coffee beans is still intact wrapped by the horn skin and undigested.

The enzymes in Luwak’s stomach during the overnight process add to the coffee’s flavor by breaking down the proteins which amazingly lower down the caffeine and acidity content, brings new scents of sweet aroma and especially creates a complex full body flavor with clean and long after taste.
