    A couple notes on Guatemalam Coffee:

    Guatemala Huehuetenango Finca Huixoc: Recommend roasting Viennese/Light French or Medium High (moderately dark brown with some surface oil).

    Guatemala Coban "Tanchi": Recommend roasting French/City High (moderately dark brown with surface oil).
