I have found, as my sense of taste becomes more educated through experience, that paper filters do change the taste of the coffee. Is that a good thing? Taste is subjective, and it also depends on the coffee and the filter. Paper filters out some of the coffee particles as well as some oils and/or other larger molecules. In a drip machine being fed cheap coffee, that might be a good thing. With a "gold filter" you need to use a slightly more coarse grind and that might mean using more coffee for better flavor. For my home roast, I get better flavor and body with the Espro Press which has stainless steel mesh screens for filters than I do with the Aeropress which uses a paper filter, even though the Aeropress brews with more force.
