I'm going to start roasting at home in a couple weeks and curious. In your experience, what is the best way to control the temperature of the roaster.

Take a look at the Mill City videos on Youtube... they have a whole roaster 'class' online. When your roasting you need to balanced two variables - gas & airflow. In general, you will be high heat / low air at the beginning of the roast and low heat / high air at the end.
