We use a food grade grease for most of our roaster's needs. There is also a high temps food grade grease for the drum shaft.

High Temperature food grade grease should be available from suppliers in Europe. Over here it costs around $20 per tube. Problem is that everyone wants to sell you a case.........well, north of the 49th parallel anyhow.
