Cleaning roaster drum on 12 Kg Dietrich

Hi, I suspect there is a buildup of baked on gunk inside the drum of my Dietrich 12 Kg roaster. I can feel it inside the door and it is obvious on the glass.
The grease builds up very quickly inside the exhaust pipe so it could also be inside the drum, don't you think? Anyone have thoughts on this? Thanks. Cristina

Generally you won't have build up inside the drum because the friction of the beans keeps it all clean. I suggest you call Diedrich and ask them for the maintenance schedule they'll be able to help you out the best. It sounds to me it's been a while since a thorough cleaning job has been done on the roaster

It may be good to bear in mind that most drums (depending on type of metal, usually) are supposed to be "seasoned." How thick is the residue, as far as you can tell? Is it noticeably thicker than that in the exhaust system?
