Research: Information on the roasting industry

Hello,

I have a question about the roasting industry. I'm trying to find information on the industry's code (NAICS), the revenues and so on. Also, there are companies that are roasters and coffee shops. I'm not sure if anyone knows roughly the percentage of coffee shops that roast their own coffee.

I know these are specific, but it would help me a lot! Thanks!
