What do you need to do to a building to roast coffee in it?

I'm talking exhaust, afterburner, etc... Kind of lost there isn't much information on this out there.

Also how do you go about finding permitting laws/licensing laws for your state/county? There should be an interactive guide to this stuff.

You pick up your phone and call your city's health dept. and then you call your state's health dept. Then they tell you who you need to talk to, and you talk to them. You don't need no stinkin' interactive guide, you just need a phone, a pleasant demeanor, and a few questions asking for help. :)

LISTEN to Peter's comment. That is how most of us have done it. Every state and city and township is different. So pick up the phone and contact
the right officials. That is where you will get all the RIGHT answers to all your questions. There will be a long list, so start local and then move
toward county, then state. Whatever roaster you decide upon, they could answer your questions for setup of roaster and afterburner etc.
When you contact these officials, pick their brains for who else you might need to contact to start your business on solid and legal ground.
I would encourage and suggest you make no shortcuts regarding proper business setup. It is a nice feeling to sleep well!
