Percentage of income on whole bean vs. coffee drink sales

I'm opening a coffee shop with a small (6kg) roaster in the store. I plan on selling bags of whole beans as well as espresso-based drinks and pour overs. For my business plan, I'm trying to figure out what percentage of (projected) income I should attribute to whole bean sales vs. coffee drink sales. Any thoughts?

Seems that you are writing very detailed business plan. So, you need to make your market analysis to recognize potential clientele, spending pattern, demand of your products and connect it to your pricing. Only this way you will be able to allocate specific sales to entire income by percentage. I don't think there is a rule of thumb you could apply to your business plan (which is a serious thing !).

uhm it's hard to tell, though, but at my shop I spend only 200g of coffee everyday for drink sale, but Vietnamese love to drink very strong coffee so I think it's enough. I makes me $80/day : )
