I am looking to purchase a commercial roaster. What company makes makes the best roaster?
Is there a machine that tests the humidity in the room and water in the bean before roasting?

That's quite an open ended question. Best to at least tell us your budget. And that's for the roaster only because you've got grinders, sealers, shop equipment, scales, initial inventory, bags and more to consider. And your shop space and location. So what size roaster you're looking for. Where you are roasting -- like are you in the middle of a city where you're going to have to comply with a lot of regulations, which might require an afterburner, or are you out in the country where you don't have to worry about that so much. What are your business plans? Do you have business prospects now who will buy your coffee? And if so, how much a week will you be roasting and how much time will you have to roast it? Or are you starting from the ground floor and growing it from there? All those questions, and more, should be answered before you even think about going and shopping for a roaster.
