Thermocouple or Thermometer trouble, BRZ-2

Though replacement may be imminent, I want to avoid buying new parts if the solution is at hand. I recently inherited a Probat BRZ-2 Sample Roaster built in 2008 and it was in dire need of some love. Roasting temperatures were way off and after stripping the thing, cleaning it, and turning a completely oil coated and black thermocouple back to its brass glory, I still noticed that (despite improvement) temperatures were not displaying properly:

1) Off, the temperature displayed on the thermometer is correct at 75 degrees F.
2) When roasting, the temp displayed at first crack is between 340 and 350 for all roasts (this was hovering from 275 to 325 prior to cleaning)
3) I took the thermocouple out and dipped it in ice water and boiling water to ensure there wasn't an issue and it was calibrated properly.

So what gives? This is a problem in both drums, with both thermocouples, so something tells me it's not those but perhaps how it is placed inside the drum.
