Just curious as to what other states/towns/city's requirements to get a certified kitchen certificate. A roaster in Florida who has no walk in customers and strictly roasts and delivers was made to get a certified kitchen which included a triple sink! Just to dehydrate fruit and herbs this area in MA requires a certified kitchen. I would be required to have a certified kitchen if I sold bagels and just toasted and spread the cream cheese. Sell a bagel as is and no requirements. Some towns are saying all stainless tables, certain type of flooring and wall covering and of course a triple sink with a grease trap.

Yes here in Florida you have to meet the same requirements as a restaurant. This includes three partition sink, hand sink, grease trap, no access to the roaster to get to the restroom. AND the ceiling about the roaster has to be flat.


Look forward to hear what requirements other states have.

In Iowa we can get a food processing plant license. Under that license, a business can use a two hole sink if you can show that you can still sanatize dishes after washing by hand. Employee hxnd wash sink required but no public restroom. (Need not meet ADA standards.
