percentage of products sold

Hi,

I am working on a projections worksheet....have only a concept at this point, not building plans, or a site chosen or anything yet.

I have done a number of google searches trying to guess what the breakdown of each product I will sell is, for example what is the percentage of whole bean sales, what is espresso beverage sales, what is muffins/scones, etc.

Am I mad to think I might find this info somewhere? When I look at existing shop's financials, I get total revenue, not categories of any sort.

Obviously just a stab will work at this point. I have to start somewhere!

Most shops keep this close to the vest. You will sell 8 espresso drinks for every muffin. Now that will be different depending on you locations and offerings.
