Greetings hanytrade. Since it's a brewing method you can use any coffee...taste preference I reckon. The few times a year I make it, I prefer a medium roast. Usually a 50/50 of an African and South American bean.

I love turkish coffee!! I prefer a dark roast. I use 25 % Sumatra and 75 % Colombian. I find if you use anymore than 25% Sumatra you end up with a cup full of mud. Like Brian says above...its all about preference.

thank you for your reply , and yes you are right the medium roast always hold the body and i will try the 50 -50

here we alwayes use 80% indonsian g4 60 defect and the 20% any arabica spicially the brazilian rio or santos

that may be the arabica is expinsive , any way i will try the 50-50 then tell you .

any information for the thick and solid face ?

The thing about dark roast coffee is that you lower the acidity and boost the body. If you take a low acidic coffee that has a big body and roast it dark...you are left with a mouth full of mud. You need acidity to round up your coffee.
