What to do with leftover beans?

I like to grind my own, but it means that I always have less than a full serving of beans leftover. I don't like to combine with a new pack though as I am always trying something new, but it means the old beans get stale. I keep them as airtight as possible, and I guess I will make a blend from the ends of numerous bags.

Do you grind the whole bag at once, or do you grind the beans as you need them?

By the time you're ready to make a blend of the ends of numerous bags, all of the beans will be stale.

How do you make your coffee? If you're using a French Press, you can adjust the coffee/water however you want. That way, you can use up the coffee to make one last cup.
