Cafe de Olla Cold Brew / Infusion vs. Syrup

I love cafe de olla and am trying to make it work for a cold brew beverage. I have tried a couple of different homemade syrup attempts but have not been too pleased with the results just yet - the syrup adds a syrupy element (imagine that!) which cuts down on the refreshing aspect that I'm going for. Does anyone have any experience steeping ingredients (in this case, piloncillo, cinammon, orange peel) in with the cold brew. Just would like to get some thoughts from the collective expertise of the board on some ideas for how to make this work.
