I didn't see any "Regular Without Bloom": it's just regular (bloom first, then pour).

is there any point to this?

just bloom : red apple with cinnamon
coffee without the bloom : bland & syrupy
    after cool down : peach.....mmmmmm

I wonder anyone would try "cowboy sock filter coffee" with same method...
that would be interesting, ha ha ha
