Whats everyones take on these and what does everyone use?

Do you prefer a base flavored already with chocolate and no coffee flavor or one with a coffee flavor only that you add addt'l flavoring too according to the customer?

I've tried Stastero and liked it, it's coffee flavored. I've tried Giradelli choc/white choc base and don't care for them because they aren't coffee flavored. I recently switched to MoCafe and like it...it's very coffee flavored.

This will prove interesting to see how well a coffee flavored soda will do on the market, althoguh I do not give it too much of a chance considering how previous flavored sodas and gimmick pops have survived in previous years. Examples like coke with vanilla, with lemon, clear sodas, even cherry coke isn't getting a strong hold on the market.

So I hope coke releases a wholly new product and lets it pave its own road.

Am I the only one? When I was a lot younger, I can remember my father making his morning coffee. The wonderful smell would overtake the entire house, just like when you walk through the coffee aisle at the grocery store. And the taste... Oh, the long lost taste of a rich, smooth cup of coffee flavored coffee. No cream, no sugar, no flavorings, just a great cup of coffee. I know many people will use the reasoning that a persons senses change as they age. But I have talked to many people who are in the same boat as me. Has anybody had luck roasting, brewing, and drinking an "old school" cup of good coffee.

I have tried many different store bought and specialty bought beans. I have a good burr grinder and have used both traditional brewing methods along with cold brew systems.

What is the answer to making a non-bitter, rich, smooth, great smelling, great tasting cup of coffee?

Any coffee crystals or instant coffee will be very bad. I sometimes make a coffee flavored milk shake and use high quality freshly roasted coffee beans ground very, very fine and just dumped in like that with out brewing. The shakes are great and taste like freshly roasted coffee smells. Slightly gritty but delicious. Try it, it may work. good luck.

Coffee Coolattas from Dunkin Donuts are my fave during the summer. The other fast food iced coffees don't do it for me anymore, not since I discovered real coffee. The Coolattas are like a coffee flavored milk shake.

As far as your experiments with vanilla flavored iced coffee at home, I'd recommend brewing your coffee twice as strong as you normally would. Muy fuerte!! That way, the ice doesn't dilute the coffee flavor.

OR... of course, use any left over coffee from this morning to make the ice cubes, then add that to your blender with regular strength coffee and vanilla flavor, etc.

I'm hopeing that I didn't miss anything, and have found this topic precisely what we've been mulling over for our coffee venture. Borrowing from the original post.......My question is about size offerings within what I have to presume is a traditional espresso coffee cafe.

As an example.....What do you serve or offer if someone walks in, wants to sit down and asks for a true double cappuccino; 1/3, 1/3 and 1/3? That's, at best, a 6 oz. serving. Do you offer, as we've been thinking, "traditional" espresso beverages "and" American style coffee flavored drinks? I'm not being sarcastic, but describe the 16oz cap's, lattes, as "coffee flavored", as they do defy the base recipes.

Our thought is to split the menu and let the customers make their decision as to whether they want to be served "No. Italian style" or "Amercanized version" coffee drinks. That demands "to-go" cups of even smaller sizes; ie, 6oz., and also demitasse to 4oz and 6oz. hard cups. If the operation doesn't have "sit down", then I'd understand paper cups only. By the way, some shops in Brasil have small auto dishwashers built into the front counter areas for the hard cup inventory.

I think a companion question to consider is just how you'll serve the in-cafe' espresso or cappuccino verses the to-go order.

One thought is to clearly identify to-go orders as "American Style 12 oz. or 16 oz......(ouch).....cappuccinos. In shop clients sometimes prefer the traditional ristretto machiatto, which would be absurd if cranked out in a 12oz. cup.

My curiousity is how you are communicating with your customers? Do you make it clear that their "big gulp" orders are not traditional, or do you let them figure it all out?

I've been mulling this over in our sales model, although we are not traditional sit down locations. We'd like to offer demitasse cup servings of espresso, etc., but know that we'll have to accomodate the coffee flavored drink clients............ which, of course, make up the greater gross dollar value of most coffee businesses.

Any comments......?

I realize each to their own when it comes to anything. We are all different which is what makes life interesting in the first place. So no argument there.

My question, however, is why someone would take good specialty coffee and mess with the taste? If the taste is not important then what purpose does specialty coffee serve for that person, other than perhaps a little ego trip? Just a question with no malice intended.

The there is the issue of how coffee is flavored. Come to think of it, coffee flavored by a roaster is never top quality in the first place, so I guess I should get off my coffee barrel.

Then again, if one is going to prefer flavored coffee, why not at least start with good coffee and then add as much or as little flavor using a top quality syrup as they want to suit their taste? That's more than they're going to get from roasted and flavored coffee.

Cecilware is not a commercial espresso machine, if you took a trip to cafe darte, italian owned and italian run, he'd be shaking a finger at you, come on, an itialian restaurant without true italian espresso, this is soo taboo.... The original espresso machine was created in italy, the very concept of serving espresso that is substandard in the states in the true tradition means you want all out, balls out quality in this area even if you serve only 2 shots a day, it was a nice gesture, but is absolutely not in the vision of a true italian operation.

Did they get a real grinder, or is there "mr coffee" on the front of it????

Anyway, your intensions were valid, but I gotta reinterate, this will never and I mean never produce anything outside of coffee flavored water if the darn thing even works at all, I highly suggest looking into commercial espresso machines and commercial grinders, otherwise that place is going to insult any true coffee lover.

Hey spindoc...I use only the highest quaility coffee.....and we sell flavored coffee...flavored coffee still has to have a coffee flavor! As to why not just use syrup...some people do not want the sugar...I know what you are going to say...sugar free...have you tasted these? YUCK! Anyway as I said before I do not drink flavored coffee but I do not put people down for drinking it.

I do a ton of frappe's a day and since no one has addressed machines, I thought I would. I started out with a good home blender - burned it out in 3 days. Bought the best home blender - it lasted a week. Figured I'd get a good one and ended up with a Vitamix blending station. I absolutely love it! I end up with a thick frappe in about 15 seconds and can do up to 32 oz drink easily. If you contact the frappe mix providers directly, sometimes they have a deal - buy x amount of product and get the blender free. That's how I did it. And since I was going to get the product anyway, it worked out great. Big Train had the best deal. I just ordered coffee flavored mix and add my own flavors as needed.

If you're talking about a machine that you fill up and it spins as it freezes, that's a granita machine. You will get a much better - and custom - product if use a blender.

Coffee just doesn't smell and taste the way it used to. What happened? My mother used to make coffee in a perculator. :shock: The whole house was filled with that wonderful aroma of fresh coffee. I don't remember the brand, but it was probably Maxwell House, Yuban or MJB. I tried all of them lately and they are tasteless.

For the last several years, I have been grinding my bean in a hand mill. I kind of settled on 8 O'Clock Colombian. It's not bad, but something is missing. A few years ago I bought some moka-java that was really good. When I bought the same brand again, it wasn't the same.

Sometimes McDonalds coffee is really good, but most of the time it's just like everyone else's, just hot brown water.

The closest I can come to describing the taste I looking for is good coffee flavored ice cream or hard candies. I'm not looking for a hint of strawberry or caramel, just good cup of joe.

I think you're heading on the right track, but seem to be tempted by the dark side.

You do understand my point that most coffee isn't just "coffee" flavored.
It goes down to sourcing, cupping, proper roasting. You can't find a better cup than a washed Yirg lightly roasted, or the intense blueberry notes you get from a good Harrar. And if you get farm/estate specific coffees you will see a world of difference. A Brazil Fazenda Araras will have distinct orange milk chocolate and dark chocolate flavors while a Brazil Cachoeira Estate will have cocoa and marzipan flavors---and both hail from the Cerrado region of Brazil. There's difference between a DP and a WP Sidamo as well.

I can't see any logical reason why anyone who cares about coffee, even a little, would sell beans that you ADD flavor to. All the flavors are already there. Why appeal to the LCD?

Some owners might say, "Well I do $3K a month in flavored beans and...." And the unsuspecting plebian who buys it would as soon buy it somewhere else if it's more convenient.

I don't care to be a place of convenience. We're small, but only a handful of caffe/coffeeshops in the US operate on our level of quality. I'm happy that people will drive an hour in the snow just to have our coffee, or schedule their vacation route just to stop and have espresso, etc... There are already enough average (read low quality) coffee shops, what the industry needs is more owners, barista, farmers, etc. caring about a quality product. Stay away from the Dark Roast, be a Coffee Jedi. 8)

The only time I put cream or sugar in my coffee is if it is too strong. In my opinion, if you doctor up coffee with additives, you are no longer drinking coffee, you are drinking coffee flavored drinks. :lol:

EO - what you said makes sense. I will absolutely practice, practice, practice. Coffee-flavored water... that's funny. But, sadly true. No doubt, I wouldn't feel comfortable about opening my shop door until I know what I am doing. Thanks for the advice!!!
