This shop was my dream, being the coffee lover I am! Unfortunately, I must relocate in January. I have certainly considered hiring a manager, but the shop has great standing in the community and as you owners well know, the barista is a major key in the sucess of this business! I am afraid an out of town owner is not the answer for me, so have decided to sell.
Shop is appr. 1200 sq ft, a drive thru window and is located in a strip center. Been in business since July 06, self sustaning and still growing.

I write a weblog called The Truth Laid Bear, at http://www.truthlaidbear.com.

Like many people, I've looked for ways to help assist those in South Asia who were affected by the recent disaster. And as a coffee lover, the Sumatra region is obviously well known to me.

So, I decided to put together a directory of Sumatran "fair trade" coffees which can be ordered online and which (should) benefit the local Indonesian growers the most.

As a coffee-focused community, I wanted to invite both your feedback and support. If there are other coffees that should be added to the list -- or if you have reviewed/experienced some and wish to recommend them -- please drop me a line with your suggestions. I''ve been lurking here for a while, just registered and I wanted to toss out my latest idea.

I am a physician in a 400 bed hospital with no coffee servcie outside of the cafeteria and the horrible vending machines. We have an adjacent 400bed hospital I am not asscoaited with but my partner is. I am not going to be able to do this full-time initially but I hope to one day be able to expand to the point it replaces medicine entirely.

Town is close to 100K with 3 starbucks and 4 or 5 smaller private places in town, all doing very well. Nothing in the hospitals at all.

So we have the opportunity and I think the chance to do both hospitals simultaneously. We have reasonable relationships with the administration, as we are both on various committess within the hospital. I know medicine, and I know coffee only in as much as I know my day is not complete without a great cup (or three) to start my day and often, where possible a good pressed cup in the afternoon.

I seriously explored the option of a franchise through a growing company in the SE, USA,. I met financial #s and the toen met demographics but they were not interested in bridging the gap across the 3 or 4 states to support us. They also wanted NOTHING to do with a cofee cart or kiosk. That was actually in the agreement!

SO I am back to the possibility of a cart in one or both of the hospitals. I think it cold be a profitable endevour for us, I don''t think we NEED a franchise, but honestly I/we need some education in the industry.

Carts/Equipment: Size, ammenities (health dept regs excluded), equipment?
Labor: estimate costs? both of us are physcians and will be unable to spend more than casual time at the stands. I want to be involved but I will not be able initially to leave my obligations to run the store more than a week or two as it gets going.
Lease:Not sure what to ask hospital for space. Do I ask for a set monthly rent for the space or a % of sales? If a % what is customary?
Education:outside of this forum, where can I go to educate myself and future staff as to proper technique and mgmt of the business.

I''ve seen \"turn-key\" setups online for upwards of $48,000 and that seems a bit much, but it did include cart, Training, and \"on-site consultation\"

I''m a hands-on guy and I think a pretty quick study, I can''t imagine I need an extra $20-30K in consultation for the business.

So my questions: Does this seem like a viable option? What kind of industry norms can I expect in terms of sales/profit for a hospital based cart/kiosk in a facility this size. Should I try and do both in simultaneous/quickly staged openings, or do one and wait to open the other? Concern is once mine is open, someone else will snap up the other facility quickly.

I don''t know what I don''t know at this point. I would appreciate any guidance you could give an eager, motivated, coffee lover.

However, the family founders of the company have more than 18 years of experience in the coffee industry.

We own the farms in Honduras, where coffee is Shade-Grown. It is also a Single Origin coffee, which means it comes from the same land, guaranteeing the quality over time of the beans.

We started in Honduras in 1984, where we began exporting green coffee beans to Europe, as we still do today. In the mid-90's we introduced our packaged brands to the gourmet market in Honduras, having success locally and Unexpectadely internationally, when tourist (most of them from the USA) tried the coffee.

Hello all,

I am a new home espresso machine owner (lifetime coffee lover), and have been looking for a particular style of cup for caps and lattes:

A plain white cup, shorter, with a wide rim (like the cups used in latte competitions), but 12 oz instead of 14 oz, and with a rounded handle.

The only cups I am finding that match this description are available in bulk only (such as the Oneida Rego 12-oz. cappuccino cup), and I obviously do not need 3 dozen of these, nor am I enthusiastic about spending over $100 for cups, when do not need any more than six cups and saucers.

My best bet seems to be to find someone who owns a coffee house, and would be willing to sell a few cups and saucers from their supply... if anyone is willing or able, please let me know. I have otherwise had no luck with the online companies who sell them by the case, as none will break a case.

... I would also love to hear if anyone has a lead on any on any stores that I have missed that carry cups such as this.

BTW, I have seen the 14-oz. competition cups, but something about that non-round handle with that comes curves up at the top really turns me off...

But i have tried the coffee before at a blueberry festival once and i thought that the coffee had a lot of kick to it. I'm the type of person who always looks for the "treasure in the trash". I love coffee and will try anything once...be it fresh roasted from a coffee supplier to the canned stuff at the supermarket. In my neck of the woods, there are no local roasters. The closest I know of is in Tampa and I mail order it. It is remarkably better than the stuff at the supermarket, but it's also very expensive- so I try anything I can get my hands on locally, too.

I truly believe there's a difference between a coffee lover and a coffee connoisseur, but they do go hand in hand sometime...

Good question Coffee Lover...In our experience we tend to look more where the driving traffic is,i.e., traffic lights, near freeway on ramps (morning traffic), and heavy residential areas. They seem to be the most successful.

I love all kinds of music with my coffee. Usually I prefer instrumental stuff like contemporary jazz. A friend of mine referred me to an up and coming saxophonist named Lance Koonah. After listening to a music sample on CDBaby.com I ordered his CD. Really catchy melodic stuff that any music/coffee lover could get into.

I'm an avid coffee lover and have mastered brewing and grinding. I want to start roasting my own beans though. So those of you that have been home roasting:

What do you use?
How do you like it?
How does it perform?

I am not looking to spend a fortune (up to $120). I want a good beginner roaster that I can achieve good results. I am currently looking at the FreshRoast Plus 8 or the Hearthware I-Roast. I don't see any drum roasters that I think would suit me. I am the only coffee drinker in a two person household. I want to roast inside so smoke does concern me. I really only use about 3/8 cup of whole beans per day. Enough for my 32-ounce French press. So I will not need to roast massive quantites at once. I would like to be able to roast every three or four days enough beans to last three or four days. I know that the two roasters above will only brew enough for a pot at a time. I understand that I will have to brew multiple batches with cooling time in between batches. So ease of use is important, but I do not want to skimp on quality either. Okay you experienced guys what do you think?

I am a long time coffee lover and just recently decided to start roasting my own beans. After a little research, I bought a Hearthware I-Roast and a sampler pack of coffee beans plus a couple pounds of other green coffee beans. To date, I have not produced anything that tastes or smells remotely like coffee. The beans get the appropriate attractive color, and look as if they ought to be good but forget it. Unless I roast them really dark, approaching a light vienna, I get a little in the way of aroma and a dirty dish water taste. Can anyone give me some advice? Thanks..

Actually, yes that is part of the deal...if the deal happens. This has been an ongoing discussion for about a year and a half now and I am beginning to wonder if the sale will ever really take place. So part of the reason for my personal experimentation is back-up.

I have worked for the same employer for the past twenty years. Outsourcing has been threatening to claim my job for the last five. It has not happened yet, but I have watched my facility go from 3,200 employees down to 930. The next wave of cuts will get me. That is part of the driving force behind my desire to prepare for a new career. The coffee business is only one avenue I am considering. I have also gone back to school full-time, this time for a business degree. I only have two real interests or hobbies in life: I have been a motorcycle enthusiast since I was 7 (I am 45 now), and a specialty coffee lover since my early twenties. I have been home roasting for a while and it is something I really enjoy. I figure if I have to change careers at this point in my life, I am either going for the money or going for something I am interested in and have some passion for.

Hi Jack,

It sounds to me like you are probably not going to get the kind of traffic you need to stay in business. One thing to think about is if you are adding specialty foods to the mix, your costs will increase and you will most like not receive a good return on your investment. Food is perishable (obviously) but most of that food ends up going to waste. I do not think that adding gellato and the like will increase your sales as much as it will increase your costs. Sorry to seem negative, but I don't think anyone on this forum wants to see a fellow coffee lover/entrepenuer (sp). not succeed. Especially in a town of only 1500. Best of luck to you! :D

Coffee Lover, I don't get it, but you are like a lot of people that claim they can tell a taste difference in regular vs. decaf.

I usually drink regular because all the flavors that are available are only available in regular. If all coffee was the same price and flavor, I would choose decaf so I didn't have to pee so much :(

A couple of weeks ago I was at a cafe and asked for a freshly brewed coffee, I watched and expected something to come from a drip filter of a cafetiere. Regardless of this I was presented with an Americano! I proceeded to go crazy, and caused a huge fuss. My other half told me that this was stupid, and that I was in the wrong. Was I?

Also... I spent a night at a friends house. My friend knowing that I loved coffee brewed me some instant as a gusture of good will! My initial reaction was OH NO! But, I decided to say thankyou, smile and drink the coffee and after what felt like an eternity, gulp after gulp after gulp the coffee had gone.

What would you do in these situations. And have you ever been in such situations yourself where anyone else wouldn't say anything, they'd be quite content. But you being the coffee lover that you are must complain?

A wine and Coffee Shop sounds like a GREAT plan! I would say that wine by the bottle would be the easiest way to start, but I am a coffee roaster and coffee lover and only an occasional wine drinker. I have a low-end Mr. Coffee standard drip coffeemaker (plastic), because I cannot afford a fancy machine. My problem is since it is plastic when the coffee flows through the machine it comes out tasting stale, like hard water kinda feeling sorta like. It is not the coffee but the machine as the coffee I make is quality. It appears that since this machine is plastic and it runs throughout the tubes inside that I get the flavor of the cheap machine in my mouth. Anybody have any suggestions as I have cleaned it many times.

Here are some suggestions:

Use Baking soda to cleane your espresso maker. Dissolve it in water and fill in the water tank. Flush it through the machine by making espresso without coffee and also run hot water through steam/hot water wand. (I am assuming that you have a pump operated espresso maker). It will take away most of the plastic taste.

You also need to watch the quality of water used for making espresso. Use some coffee cleaning liquid that will remove coffee stains on the plastic tubes. Coffee stains can be stubborn.

Also it will be a good idea to replace the stained and old plastic tubes that you think may be causing the bad taste in your coffee.

(Just an observation) -Fungus is as passionate about coffee as any coffee lover can be. Leave the machine with coffee stains or the coffee grounds for just two days. You will find fungus thriving on it with its white cover on brown coffee.! The point is that the coffee should be cleaned immediately after use. Stale coffee may can add stale and bad taste as you have described.

Hi,

I'm a coffee lover eventhough I'm not an expert. But I can tell when I like a coffe or not hehe. I've been using a Sarbucks barista for expressos and capuccinos and a standard "Mr. Coffee" machine for daily cofee.

I've been doing my homework to find a real coffee machine for everyday and found 2 options. The technivorm has won on excelency of coffee flavor. The only flaw is that it will make my counter look like a laboratory. Te second option is the Capresso which i've read that makes the best (home made) coffee and has better design.

Does anyone have an opinion on those or how would you decide?

Hello all! As I embark on this dark bean journey that I've come upon - I'm reaching out for suggestions between:

Capresso 560 Infinity Burr Grinder ($80)
Breville IKON Conical Burr Grinder ($100)
Mr. Coffee Burr Mill ($30)

Obviously, the Capresso or Breville are more expensive and better. But is it $70 better?? I'm a new Dad and we're on a single income and I have to decide between Mr. Coffee or my kid's college savings this month.

All joking aside though - is this Mr. Coffee Burr Mill any good for basic home use (perhaps 5-10 cups per week) and for a new coffee lover who's not too particular quite yet? The Capresso seems to be getting better reviews than the Breville. Any advice on which of these three?

Cecilware is not a commercial espresso machine, if you took a trip to cafe darte, italian owned and italian run, he'd be shaking a finger at you, come on, an itialian restaurant without true italian espresso, this is soo taboo.... The original espresso machine was created in italy, the very concept of serving espresso that is substandard in the states in the true tradition means you want all out, balls out quality in this area even if you serve only 2 shots a day, it was a nice gesture, but is absolutely not in the vision of a true italian operation.

Did they get a real grinder, or is there "mr coffee" on the front of it????

Anyway, your intensions were valid, but I gotta reinterate, this will never and I mean never produce anything outside of coffee flavored water if the darn thing even works at all, I highly suggest looking into commercial espresso machines and commercial grinders, otherwise that place is going to insult any true coffee lover.

I think you both have valid points. In Australia Robusta is not popular. I struggle to even find it in my local supermarket. The local roasters I go to do not sell it either. I just posted a piece earlier about this. I do not think it is some plot by the men who grow arabica to push the men who grow robusta out. My guess is the flavor of the world has changed and now people who drink the coffees like Arabica better? But with this in mind I recently had one week in Bali where I only drank the Bali Robusta. It was different than what I am used to. I am not saying I would drink it everyday but maybe the holiday atmosphere made it seem special. SO being a peace maker and a coffee lover I think right- :-D -right.

I stay in Malaysia, next to Singapore. I'm a Chinese Malaysian. My mom also a coffee lover but the coffee she drinks is the normal one from the shop. She drink Nescafe, a popular shop coffee here. I think Nescafe is popular here maybe because it is cheap and taste ok for ordinary coffee drinker here.

Our country here also has luxury 'shop' (sorry vocabulary is poor) to drink coffee like Starbuck, Coffee Bean, San Fransisco, Gloria Jeans etc. I guess, I can only get those bean coffee from these 'shop'.

Electronics are marked up 15%. WB coffee is marked up 50%. Average sale from a "coffee-tupperware like show" ??

Show up at someones house with three other potentials there, find them at the moment they need the new brewer-more coffee-have the money for it, convince them to buy equipment and beans, keep them buying from you and never visit SB or CC again (a HUGE portion of our customers come to us because of the social aspect). Sounds like a tough sell to me.

You'd have to do a lot of parties, change the way people buy, keep them from the local grocery store and coffeehouse, all while keeping your "day job".

PS Keurig, Douwe Egberts, and other major coffee suppliers ARE marketing directly to the home buyer (maybe not the "true" coffee lover, but a large part of the market is not gourmet). They are making the single cup (pod, k-cup) a viable market. BTW, I have a Keurig brewer and it is very good. It is not as good as my own fresh beans, but is a definite advance in the whole coffee market. It works well when I am in a hurry or don't want to/can't make a whole pot.

Couldn't resist any longer...went and bought the Incanto Sirius. For other people like me (coffee lover but migrating from a regular coffee machine that can also make espresso), I'd like to share my first impressions.

I have these settings:

12 gram dose
high temp
SBS set to about 1:30pm
default volume on the small cup setting
second to finest grind
Illy Espresso beans

Taste
Now, having been using a $140 Krups I have to say that the espresso from the Incanto Sirius tastes absolutely lovely. The crema on a single shot was excellent (I think...looked good to me anyway), and ok when doing 2 shots at the same time (not quite as thick as with the single shot but still ok).

Steamer
There has been a lot of talk in threads about the steamer wand not being very good and not moving very far. Well, I think they must have redesigned it since those comments because it seems to angle out quite nicely. The foam is, well, foamy. Not tight foam but almost as good as one might hope for...its as good as you get in your local Starbucks in my opinion. I tried covering up the tiny hole that I'm assuming lets the air in and that seem to help a bit.

LCD/Menu
The menu system is excellent...really good. Like me, you may be thinking that the LCD "touch sensitive" panel is just a gimick and just something else to break. Well, maybe, but I gotta tell you that it is so easy to use and gives good feedback to the user during menu selections and brewing (not to mention all the sensors telling you the door is open and so on).

Temperature of drinks
Set the temperature setting to hot, and pre-warm the cup you're going to use (although you won't be doing that with the warming plate..see below) and you're going to get a cup of coffee that to most average people is hot enough...again, in my opinion.

Leak filling trip tray Issue
As far as I can see so far, it's not an issue. If you put something under the steamer when you vent it to get the steam going I think it'll be fine.

Small issues
Yeah, I suppose the resevoir could be a bit bigger. By the time one has rinsed, vented enough water to allow the steam to come through and rinsed again at the end you get through a fair amount of water each time you use the machine.

It is really weird that the LCD panel backlight doesn't go off in standby.

Talking of standby, I wonder what the power draw is when in this state...anyone know? I think I'm going ask Saeco that question.

The cup warmer takes a while to warm up and you have to turn it on through the menu. I won't use it for warming one cup to use for my own cup of joe, but if you were having a dinner party or something like that where you know in advance you're going to use the cups then yeah, it's kinda nice to have. Not very big but no one should complain about that right???? Why?...because, my freinds, you are buying what has been designed as a compact machine. Having said that, it comfortably will hold at least espresso cups or 4 small coffee cups. If you want a big cup warmer though go buy a hot plate. :-)

Summary
Ok, I've only had this thing for an afternoon, but having spent only 20mins getting things setup I'm now enjoying a really nice cup of coffee (although I have had way too much of it today :shock: . Notwithstanding the price-tag, an average owner is probably going to like this machine. And really that's why I wrote this review. I have read the comments on this forum and while some of them are really helpful (for example the settings to get a strong brew...saved me time) some others are a little on the advanced side for an average person, albeit well meant. I mean, I don't think many people are going to care that the secondary heating block is aluminum (primary block is Steel). And the time in seconds that it takes for a shot to pour is somewhat interesting but irrelevant if the product looks and tastes good. As I said though, all well meant and I'm sure there are some advanced coffee gurus out there that would find that info important.

That's it for the moment. I think I will post more impressions after I've been using the machine for a month or 2. Dropping this kind of money on a coffee machine is a big deal for most folk so I'm sure that others who use this site would appreciate the unsolicited feedback on this or any other super auto machine.

About the taste it's quite different.. for me tha aroma of Arabica more strong than Robusta. That's my experience what I ever drink of Luwak Coffee.... :-) :grin:

I fully agree that taste is up to the person. Thanks for the info. To be honest and perhaps that is very obvious, my knowledge of coffee is not that broad. I got into different coffees about a year ago. Part of the reason I jumped on this site is to see what else is out there beyond the scope of the basic American coffee shop choices.

I don't get into wine, but like coffee I appreciate the background that goes into the of making my personal cup of coffee. From the type of soil on down it is a very interesting process. I am here in Kentucky in the USA. Our pride and joy as far as drink is Kentucky Bourbon. I have always been fascinated with how it is distilled. Trying the different kinds of bourbon's is like that of finding a good coffee. Hey, my favorite flavored coffee is Ky. Bourbon coffee, go figure. But anyway, thanks for the insight for this rookie coffee lover.

I HAVE tried Gevalia coffee many times in the past, and, as a dark roast coffee lover, I find nothing that Gevalia offers to satisfy me. I do not like the Scandinavian style aftertaste that Gevalia has... SO, I wouldn't recommend them, but you might like it if you like that Scand. style and you are not a really dark roast coffee fan!

I had never heard of the Coffee Fool before until I saw one of their ads on my gmail account that said : Secrets The Coffee Execs Don''t Want You to Know. Being a coffee lover as well as having a conspiratorial streak in my personality, I clicked on the link and read on. What they said made perfect sense, so I ordered a few pounds of their coffee beans and waited in anticipation for truly fresh, sweet coffee straight from the roaster.

Sadly, my world didn''t change after drinking a cup of their brew. Though I must say the Malawi was very good. It tasted fresh and had a slightly sweet, nutty flavor and a lovely aroma. I''d buy that one again. But the Kenya AA was only average. The same can be said for the Costa Rican and the Papua New Guinea. None of these were bad coffees by any means, but they certainly didn''t rise to the level of the hype put forth by the company. I''ve had coffee just as good, or better, from local roasters and even bulk Millstone from Wal-Mart. And when you add in the shipping premium the cost/value ratio slips dramatically.

This wasn''t the first time I''d purchased coffee online, nor was it the first time I was disappointed by the product. It is now dawning on me that perhaps this isn''t the way to buy coffee. In the same way I wouldn''t dream of buying a pair of shoes off the internet, I think the same can be said for coffee. But with shoes that don''t fit you can usually return them for a refund, but coffee once opened is yours for keeps, like it or not.

Here in the Philippines there are only a few major players for coffee and the biggest has to be Starbucks. I prefer some of the other players like CBTL and Figarro (a local coffee shop) but Starbucks is the most convenient of all. As a coffee lover, there are times when I just need my coffee and Starbucks first comes to mind when your on the road. They're everywhere and the brand recall is just too much to ignore.

That would be some of the reasons why Starbucks is really strong..it's all about marketing and finding great locations! And another thing, I guess if you're always drinking Starbucks, it becomes an acquired taste? I'm not sure..what do you think? Congratulations to them for succeeding in this!

I had previously purchased the Vienna Digital and was positive delighted with the performance of this machine. My only regret was that it didn't have a bypass doser, for the occassional decaf, etc. When the Incanto model finally became available in 120V 60Hz, I immediately ordered it. Not only is it a smaller machine, but it seemed to have everything I wanted. Now for my observation after a month of using it:

I immediately felt as though the Vienna produced a more creamy, aromatic cup...was this my imagination? Well, it took a while to get used to the SBS feature and I'm still not entirely convinced any of its positions makes the coffee as good as the Vienna did. Anyway, I now know that you get more coffee and better crema if you go more to the left.

Another little thing is the permanent panarello wand...with the Vienna, I just removed that silly thing and could produce the most velvety froth in any container by learning to use the point of the wand like the real Baristas do. That's all been eliminated with the Incanto since you really can't remove the panarello for use of the wand. But, I am getting used to that thing as well.

Just a few other oddities...the Vienna left hard perfectly rounded pucks in the drawer, while the incanto seems to be more muddy and moist (I think this is the result of the SBS restricting some of the water from getting through. And the Brew Group gets a lot messier than the Vienna's did with coffee smeared all up and down the shaft (even beyond the rubber seal), which is something the Vienna never did...the brew group remained relatively clean except where it slid the puck into the drawer.

In conclusion, I miss the Vienna and it worked so well I became used to it. The Incanto is a very different machine...looks better, has the bypass doser and I am slowly getting used to it as well. My feeling is it gives you too many options...the Vienna was a simpler unit (if it only had a bypass). Alas, I am a coffee lover and have now begun roasting my own beans and there's nothing in the world like it!!!!
