I am new to coffee roasting and out of curiousity I walked up the Bulk Coffee Bean aisle at our local ALbertsons and lo and behold I peer into the a bulk container of light roast and medium roast Mill Stone. Both the roast had flecks of oil showing on the outer shell of the bean. Reading from one of the most reliable websites with tons of information on roasting there in a picture shows flecks of oil when beans reach "Full City +". It seems like almost any roast can exhibit flecks of oil on outer shell?

Reading another thread reminded me of a question I have had for quite a while. Most bulk coffee I see is stored in relatively open containers. I see it in plastic bins with a hopper in the bottom at super markets and health food stores. I'm sure that the exposure to air and light doesn't do it much good. I have been in some coffee shops were the coffee beans are stored in open bins. I would imagine that some of the coffee beans sit like that for weeks.

Wouldn't the coffee that comes in air tight and light proof packages generally keep better? Also, there seems to be some controversy over storing coffee in the freezer. Any ideas regarding that?

Happy Thursday!
We've just opened 3 months ago and are already being asked for bulk coffee to-go. I've seen the boxes that places like Noah's Bagels sells and was looking for a source - anyone have a great take out container that they can recommend? We'll also be using them for realtor's open houses around here (great marketing idea!)

our prefferences are:

espresso machines:
LaMarzocco and Synesso, Rancillio makes some good machines but LaMarzocco are great machines.

Espresso grinders:
Mazzer/Rio

Bulk coffee grinders:
Malkoenig
Fetco

Coffee brewers:
Fetco extractor series
Bunn brewwise

spend as much money as you can to get the best equipment you can on the coffee side and skimp if you have to on the other stuff that does not make you money.

Supreme bean makes great coffee. One of our wholesale cafe customers uses some of their coffees along with ours. They are dedicated and high quality. If you are looking for an organic and fair trade roaster maybe check us out. I would try to use a local roaster if you can within a few miles of you but if not then look at a whole bunch. Get coffees from at elast 6 roasters and choose the best tasting coffee, the best people and the best partner.
