Check local code requirements. Most inspectors do not know what a coffee roaster does or how it does it. Many municipalities are concerned about smoke/particulate matter. Shop roasters, up to and including the 12k, produce much less smoke than a Burger King and a much better smell...
We will buy last year's crop of Mexican beans for $1.50/lb. to test the commercial roasters we build, then donate the roasted beans to the homeless shelter. "Selling" cheap beans is a bad idea.
You can also get ceramic tile with the look of wood. They install it with small grout lines so it has the appearance of wood flooring without the maintenance problems in a wet environment
