I have no issue with people who have honed their skills.
I too have honed my skills over the last 30 years.
I do have issues with manually controlled coffee roasting machines.
Control automation has progressed SO MUCH that I, personally, can't help but avail myself of these advantages.
If you choose not to, that's your business.
But if you have chosen not to, without exploring what can be done with these tools, then yes, I would have an "issue".
The issue would be that you would be dogmatic, not experienced.
I have roasted manually controlled machines from 1 lb to 100 kilos.
Give me the intelligently programmed automated roaster, please.
Simply my preference, but, one established through experience of both methods.
