Is there any problem with storing beans in a stainless steel canister that is air tight?

Stainless steel is fine. Make sure you can clean and dry it completely before adding new coffee. Since it is opaque, you do not need to worry about light, but still avoid storing coffee in the fridge, freezer, sunlight or hot area - a cupboard cabinet is generally suitable.

It's fine. Just keep in mind bean is good for a week or so, and if ground it's stale after around 48 hours.
