What is the really big difference between a Latte and a cappuccino? Just the layer of froth that sits on top? I know that cappuccinos are made by pulling a shot of espresso and then foaming the milk for the milk addititive as well as the "foam" produced, but how exactly is a latte served?

About the same way but with around 6 to 8 ounces (or more depending on the drink) of steamed milk and maybe a 1/4 to 1/2 inch of froth on top of that. Espresso, syrup (if any), milk, and froth finish.

capp vs latte

No froth on Latte, unless you're adding whipped cream for a Royale, then I add just a small amount to support the cream. I add just a dash of cinnamon on my classic cappuccinos, as I've learned is done in Italy - my customers love it. You can add it to the froth, but I put it in first & mix w/espresso before adding milk.
