I have seen from your website, "The Perfect Shot of Espresso: UPDATED"

It is something like the summary of the general understanding about the preparation of good shot.

But, I would point it out that it is not right. This is not only to you but the people who velieve such understanding.

-------------------------------------------------

1-st: Dosing
how much coffee powder should be used? It depands on the size and shape of the filter bowl. Once you adjust the machine a little bit, it changes correspondingly.

2-nd: 1-oz water
How do you define your "ristretto"? Or maybe you do not make it.

3-rd: Brewing Time, 28-30 Seconds
Change another blend, or adjust the machine again, the cup will taste different, might be burnt.

4-th: grinding
Normally the courseness of the ground is the same in Italy. For example, you buy the ground from the supermarket pregrinded, there is no way to change it.

5-th: Tamping
Try different force, you will see the same result.

6-th: Tempertature
It does not change too much, and therefore has little influence on the result. But generally keep it high.

7-th: Pump pressure
As mensioned above, it changes, and almost everything changes.

8-th: Crema
The colour and shape of the crema can be different, and therefore the taste is also different.

9-th: Equipment
Of course, one has to use the semi-automatic professional machine for enough pressure and steam. Normally the home machines do not work well.

Any comment is welcome.
