Hey Chewy, this is a really difficult one to answer...if anyone knew the correct answer to this before they opened a cafe and roastery, they would probably be instant millionaires (...as they would not open unless they knew they would be!!) Best you can do is work projections on customers into a buisiness plan and estimate cups/retail bags = total volume estimated to be sold. I know of succesful cafes selling 200-220kg a month...I know of cafes the same size selling 20-25kg a month. Its a hard one to answer.
