So I'm trying to figure out how to make our coffee shop eco-friendly. My cousin and I own a coffee shop with 3 branches.

Perhaps you are referring to cutting down or lowering your maintenance consumption? I suggest that you try to monitor your basic resources. Minimize unnecessary use of materials, electricity and all others that you use in its operations.

That's right. I hired a company to do the monitoring for me and they're going to help me figure out which areas I can reduce energy and water consumption. They just started monitoring my shops but I expect to get a report in a month or so.
