Can anyone tell me what this little cover is for on my ambex?

I could be wrong but I think it is just an inspection point. You can see directly down the exhaust pipe or if your beans get stuck below the hopper? I will confirm with the owner of Ambex when he returns from a trip.

I was wondering if it helped w air flow since the ambex has (to me) low air flow even at wide open adjustment

I wouldn't run your roaster with it open. Thats just me.
