I would just break it down in terms of real costs. Figure it from a labor percentage viewpoint.

What do you want your labor percentage to be?
How many labor hours does that come out to be?
How many employees will it take to cover those hours?
Hire and schedule accordingly to what YOU need, not to what they want.

The only thing I would add is that you want to start with a bit more rather than a bit less; and work out the kinks from there. You'll even it out in no time at all ... good luck!!

Thanks, John... I am trying to figure it out, but I'm winding up with a lot of employees and I didn't know if it was excessive. But I do have a lot of part timers.

Frank, thanks for your input as well. I was kind of thinking what you suggested. I know not everyone will work out--they might realize what a lunatic I am!
