New "Owner" looking for advice

Hi my name is Marty Currie and I will soon be taking over operation of a used books store and coffee shop called Books and Beans <www.booksandbeans.org> in Southbridge, MA. The store is owned and operated by a non profit organization called The Center of Hope <www.thecenterofhope.org>. We serve people with disabilities, and use the coffee shop as a way to train individuals to work in community based jobs. We are unhappy with many aspects of the way the shop is run and I am looking for advice on how a successful coffee shop is run. My major concern at the moment is how to improve the quality of the coffee we serve.
