I just got back from a trip where I got 5 pounds of unroasted fair trade, organic coffee straight from the farmer in Nuevo Segovia in northern Nicaragua. I'm going to roast it myself, but was wondering if it would be best at a really light roast, or more of a medium?

Its been a few years, but when I was roasting Nuevo Segovia, I found it absoultely amazing when dropped just as you hear the first twinkling of second crack at about 16 minutes. Buttery body and a very sweet, caramel finish. Dropped just after first was really nice as well, but a little too much for a french press.
