oil??????

please help!

i roast my own beans for my restaurant and its happened on two occasions now that when i extract espresso and add water (or milk for that matter) i get tiny little drops of oil floating in the coffee. when that does happen i dump the coffee and extract another one, then its perfect. what and why? i sanitise the machine on a regular basis, i change the portafiller seals often enough and i only use very freshly ground coffee as i have a portion grinder. and i know i am not imagining things..... :?

please guys......?

What kind of oil is it? Coffee naturally contains oils in the beans and this is what adds to the flavor of a drink. but if you are seeing a different type of oil then something may be wrong with how the machine works
