These roasters are unique, simple to use, and with routine cleaning and lubrication will last another 100 years or more. The Royal #5 is ideal for the artisan roaster and has a maximum capacity to roast 25 pounds per batch. Beautiful! I ran one for a few years. Original 1896 that we rebuilt. Does yours come with a cooling bin? Also I noticed the regulator. Will that pass inspection? The one I had used the same regulator. The owners wife was playing with it while showing it to friends. She opened it wide open. WHen I went to light it, I heard gas. Next thing I know my 6 1/2 inch goatee was gone. In a sort of nice way I told her never to touch that again.

Sorry Topher, no cooling bin. I've lost some eyebrows and beard hair messing with LP Gas over the years also. Setting these roasters up for LP or natural gas I would recommend a professional technician install the controls (On/Off, thermocouples, pilot, computer roasting program, etc.). They are well 100+ years old and have outlived the 1925 technology. This roaster will work as is but I would strongly encourage updating before major roasting begins.
