Same Coffee changing, week to week ?

Went out to a local Restaurant, the Coffee last night was better than it has
been for a long while , WE were happy &surprised ,and tonight not as good, but at least drinkable.

And that is not saying it has been near a Gourmet at any time.
Its always from the Same Company, and sometimes it is so bad I just drink it
because I dont want water or soda.

What can be the Problem?

Only thing that comes to mind is the coffee to water ratio not being consistent batch-to-batch, leading to over/underextracting. That is provided the same batch of beans, water and equipment is used daily. Later!

Thanks, everything is the same,

Coffee is also said to be better on one side of the Restaurant, than the other, as we have seen regular customers change sides, and asked why,
and I know they have Brewers on both sides, and is one brewer going bad.

Could the Method of storage also be a culprit ?

A pot of freshly brewed restaurant coffee is at least acceptable, but the same coffee on heat plate for more than 15 minutes is pretty nasty. Unfortunately your chance of getting one or the other is 50 50. I would say 99.99% of restaurants, including fine dinning restaurants, have this inconsistency problem. The main reason is coffee is an after thought; most restaurants will have a bartender on staff, but it is highly unlikely to have a dedicated coffee server on staff.
