Types of beans?

What types of beans do you use for espresso? We usually use the dark roast type, but can you use other blends like light, medium or even those holiday specials beans?

Today we picked up some fresh Philz Coffee - Jacob Wonderbar, which is dark roast. We drank that before at Philz like regular coffee and was smooth.

Today I dialed it in as much as possible and can still taste a bit of light sourness. Using my Breville 870XL, the gauge was between 12:30 to 1 o’clock range.

The espresso came out slowly and smoothly, nice creama on top.

Not sure if I should dial it in more or maybe it’s the beans?
 
We like different type of espresso for taste in different country, do you have any other type of coffee beans are available?

We usually get the ones on sale at Whole Foods. So we try a different variety each time

whole foods carry diffierent varietals??? that is super new news.
perhaps you think that colombian coffee, guatemalan, costa rican..etc are considered different varietals?

Lol... was thinking different brands... been swamped these days.. haven’t had a chance to play with my 870XL
