Used La Cimbali issue with heating. Need some guidance please.

My husband and I bought a used La Cimbali M29 Select fpr our commercial bakery. We just had a chance to try and operate it last week. At first it wouldn't turn on. The power at the panel was verified and he inspected the plug. He then took the covers off and pushed a button inside which acted like a reset button and it finally powered up.

Unfortunately, the boiler just kept running until the pressure relief valve kicked in.

He took the boiler off and cleaned the inside with some vinegar and water. But we haven't found a schematic that matches what ours looks like inside.

We don't know what part is not working and is causing it to overheat. Also, we need a gasket, that fell apart when he took the elements out. It appears to be part number 401-194-010 from an M29 DT-C manual. See attached with red marks. The red area I tried to circle does not match ours. We have a relay unit

Does anyone know if that is the part that is not working? Any advice you have would be greatly appreciated. We are planning to open in less than 2 weeks.

I believe the part you are holding there is a pressure sensor. If your boiler is heating beyond the set point I would check the integrity of the heater coil, inspect the temp probe if present as it could have excess lime scale build up preventing it from getting a real time reading, the thermostat could be bad or stuck closed. It is also possible that the relief valve malfunctioning and releasing the pressure prematurely.
