Payment Safety for Equipment for sale?

I have a roaster we are selling and am negotiating on price with a couple different people. I have a full price offer but the buyer is international.

He sounds legitimate and can arrange for pick up at our location.

How do we protect ourselves with payment?

What do others accept as form of payment for a big ticket item such as a commercial roaster?

Anyone have experience with escrow.com? Reviews are either 5 or 1. Any other such services you'd recommend?

Wire transfer to a bank account. Separate account from your main account. As soon as the money hits, remove it
