Aeropress is bitter!

Hi guys.

I am unable to get a decent cup from my Aeropress - It keeps coming out bitter no matter what.

Firstly, I love coffee, but I a cannot understand how people can enjoy it with water only, I have tried americanos so many times but I can only enjoy a double shot cappucino with steamed milk.

Can anyone advise me? My method is below.

• 18grams coffee beans roasted no longer than 3 weeks after date.
• I grind with a porlex hand mill with the setting 4 clicks from tightness
• Boil water, leave for a minute
• Using inverted method, I fill up 100g of water
• Stir for 10s, let it sit for another 30s.
• Flip over and place on cup, then press down for 20-30s until I hear the sizzling type sound, as soon as I hear that, I pull up and take the AP off the cup
• I texture milk with an old nespresso pod machine that has a steaming wand.
• I pour about the same amount of milk to the amount of coffee extracted
• I use fine metal filters.

Where do you get your water from? Does it come from a well, city water, bottled water, reverse osmosis?

South African tap water. I've never tried anything else...
