Dialing in a Nuova Simonelli MDX Grinder

Hello,
I just picked up a used MDX in great shape but am clueless
as to how to dial this beast in. I was shocked as to how big
it is. It didn't look that large on my phone. 😳
I would also like to make it doserless. Any guidance and/or
wisdom much appreciated.

That is a fantastic grinder and the micrometric adjustment is the stand out feature for sure. Instead of raising/lowering the upper burr as most grinders do via a threaded collar, the MDX adjustment knob actually raises/lowers the motor/lower burr. I owned/used one on a commercial level for a few years and the grind quality, consistency and speed were always spot on. Keep in mind that the adjustment is designed for espresso range grinding and you may have to move it quite a bit to get in range. If you're wanting to use it for espresso (which I assume as you mention doserless) you may want to tighten it to the point of the burrs touching, then back off a bit (maybe 1 turn) and go from there. Make adjustments with it running so no bind is placed on the burrs.

For doserless, really all you can do is remove the doser and fashion some sort of spout that will securely fit around the chute. You could also design/implement something to act as a portafilter fork as well.
