My two cents as a wholesale coffee roaster and not running a shop . . .

To me the siphon is a showpiece. It creates theatre and seems it would have its place in a shop. The coffee -- to me -- was no better than making it in a Chemex or other methods . . . like my friend who runs an award winning coffee shop here and makes his coffee in a thermos (go figure).

As to home use I'd probably use it two or three times and then put it away on the shelf because it is problematic and time consuming, especially if you're a coffee geek and are trying several different coffees. I made a pot of coffee. Then made a pot of hot water so that it completely clean the siphon then went on to the next pot of coffee. A lot of work that could have been done much faster -- and with equal results -- using another method.

Like I said at the beginning tho', I sell coffee, I don't serve coffee. Big difference.
