I work for a non-profit cultural arts center that has a for-profit pastry/coffee shop inside. The current owner is leaving and we are in the process of interviewing new tenants. We grossly undercharged the previous owner ($350 mo) for the space and are thinking of proposing a rental fee plus percentage of profit to the new owners. Anyone have any advice as to how we can develop an arrangement that will be mutually beneficial to both parties? Any guidelines that you have used or are experienced with would be appreciated. The arrangement may or may not include the equipment, it is in negotiation.
