Advise Please: Does Anyone Have Experience with Commercial Pourover Drip Brewing?

Does anyone have any experience with and insight on using pourover commercial drip brewers? I've only been able to find one Bunn and one Curtis such product and few reviews. I have a small coffee trailer and we are expanding to drip coffee from just our current espresso machine.

What is your question? One option you have is using a flo-jet for plumbed models. What is your water source?

Newco also makes one. The issue is the time that it takes.........they take about an hour to heat up in the morning and i believe it is 4 1/2 to 5 minutes to brew and another 5 minutes to recover/reheat. Otherwise, they work fine
