Cold brew

Ok. So let's say you take a heavy-bodied coffee like Sumatra. You roast it to a french roast. The darker you roast the more acidity you roast out. Sumatra is low in acidity and roasting darker will boost the body. All body and no acidity to back it up makes for a mouth full of mud. Same concept with cold brew.

But what kind of coffee can have their acid removed by 100%??
