Espresso or Coffee?

For those that have espresso capabilities (and I assume it's all), do you also serve coffee?

How do you steer customers away from the coffee and into the espresso?

And if you do serve coffee, how often do you make it fresh?

And what portion of sales is espresso vs. coffee?

How do you steer customers away from the coffee and into the espresso? When they order a coffee, ask them if they would like to upgrade to a specialty drink for no extra charge.

And if you do serve coffee, how often do you make it fresh? Coffee will stay good in an air pot for 3 hours

And what portion of sales is espresso vs. coffee? A successful shop will run over 70% espresso.

sorry don't mean to be rude...but coffee wont stay "good" for 3 hours...I would swap it out at least every 45 mins.

In an airpot?

I have done several test on the acidity after 2 -2.5 hours and it is still fine.
