What should I do if I notice my main green coffee supplier appears to be skimming a few ounces of beans off of my order quite often?

I am assuming you are a home roaster? I can't imagine weighing my 150 lb sacks to see if they shorted me a few ounces. If you are talking smaller quantities for home roasting....I would reach out to the person you bought from. They might not realize they were shorting you. Let us know if you contact them.
