How bad is it if my local cafe pulls a shot only slightly less bitter than I get with my moka pot and coffee that was ground over a week ago?
 
(and with less crema before I pour the moka coffee into a cup)

That is surely not a good shot.

The well done espresso is not so bitter, but taste strong, full body, and aromatic. Not that bitter, but taste great.

Not be gound everywhere!
