How to tell when my espresso is done

Forgive me for such a simple question

When you pour a shot or double shot on a manual machine how do you know when to stop ??

when the color turns blond, usually about 20 - 30 seconds.

the accepted standard is 25-30 seconds for a double shot...which gives you 2 ounces
