Oily vs dull

I dont know to much about roasting, but had this phenomenon. After roasting, sometimes I get shiney oily looking beans, and other times I get just a roasted bean with no apparent oil on the surface. Is this due to temperature changes. Which is best, or is there a difference. I welcome any replies on this.
 
Oil is brought out naturally by roasting. The darker the roast, the more oil emerges.

As far as what's best, that's up to you. Some coffees respond well to dark roasting (with plenty of oil). Sumatra is one of these. Some coffees do better with a light touch (colombian).

That said, everyone has their own opinion. Take one bean, roast it to 3 different levels, and decide which you like best.
