Shop fitter/Architecht Question...

Hi... I am "this close" to having my space secured. I know we have discussed using one or the other or both previously. Can anyone offer any advice as to what I should look for with either a Shop fitter or Architecht? What I would need to supply? I hope I'm not asking an inappropriate question, you gusy have just been so helpful.

I have decided to go with a local architect. I met with him today and he gave me some direction, great information and of course, more work and research to do. I was very impressed with his knowledge. He has experience with restaurants and did a cafe or two that I used to frequent. I was glad to see that he had experience with this business in particular. He was surprised at the amount of homework I had done as well as the types of questions I was asking. So, even though I didn't get a response on this thread, I have gotten lots of great information from this site. Thanks.
