Apart from that, someone should tell you it's impossible to critique your grind by watching a video.

If you want to explore a finer range you may be able to do a bit of tweaking by adding a spacer behind one of the burrs. More fine grind may not be the answer in your case, but doing so will ultimately give you a bit more adjustability.
At the setting in your video and dosed consistently how are the extractions? Taste, followed by texture (mouth feel) and color are what I look for.
